For the glazed carrots, trim the greens from the carrots to one cm, peel and shorten by one cm at the tips.

Melt half of the butter in a pan, dissolve sugar in it and caramelize a little. Toss carrots in it, add vegetable soup and cook down for 10 minutes until liquid is almost all evaporated.

Just before the carrots are cooked through, add the remaining butter. Keep swirling the pan to make sure the carrots are glazed on all sides.

Mix in the parsley and season with salt and pepper. Serve the glazed carrots.
