Instructions:

For the fried rice, fry the chopped vegetables, ham and rice in a pan heated with olive oil.

Add the cooked rice, ketchup and oyster sauce and fry everything over low heat, stirring gently often. Season to taste with salt and pepper.

Crack 2 eggs and fry them in a wide pan until crépe-shaped. When the eggs are halfway cooked, place the previously prepared ham and vegetable rice in the center of the egg dish.

Gently fold in the edge of the omelet. When the egg is cooked through, place a flat plate on the pan and use it to turn the omelet over and slide it onto the plate so that the open side comes down.

Fry the second omelet in the same way as the previous one.

Prepare the sauce by putting all the ingredients in a pan and boil it down over low heat until it thickens.

You can dress the fried rice with omelet with the sauce and serve with mayonnaise, ketchup, grated parmesan or parsley.
