Wash the rice well a few times and bring to a boil together with the water. Then reduce heat and simmer, covered, for about 20 minutes until all the liquid has evaporated. Let the rice stand in a cool place for at least a day (or use leftover rice from the day before). Finely chop the scallions, dice the ham, and cut the meat into strips. Clean the vegetables as needed and cut into bite-sized pieces. Heat a wok (or heavy cast iron skillet) very high. Pour in the oil and fry the spring onions until lightly browned. Now add first vegetables, then ham, meat strips, shrimps as well as the mushrooms, one after the other, and let them brown briefly each time over medium heat. Beat the two eggs, add them and let them fry for a short while, stirring constantly. Add the rice and fry for another 1-2 minutes. Mix oyster sauce with soy sauce and mix well with rice. Arrange in bowls and serve.
