For the roast potatoes, wash, peel and coarsely dice the potatoes. Heat the fat in a cast iron roaster. Put the potato cubes in and close the roaster with a lid.

After 10 minutes, quickly remove the lid from the roaster – so that no condensation drips into the potatoes – and the roast potatoes become nice and crispy. Turn them often to the other side! Remove the fried potatoes with a slotted spoon, let the fat drain off and season with salt.

Refine the fried potatoes with paprika powder or fresh herbs!
