Instructions:

For the fried fish skewers with risi-bisi, first cut the fish into small cubes, cut the bacon into small pieces alternately on a skewer.

Season with salt and a little pepper, fry in 3 tablespoons of olive oil on both sides for about 3-4 minutes, drizzle with a little lemon juice and sprinkle with the chopped parsley.

For the risi-bisi, bring the rice to a boil in a lidded pot along with the water and a tsp of salt. Once the water boils, continue to slowly simmer the rice on low heat, stirring frequently with a fork.

When the rice has absorbed the water and is nice and soft, add the peas and season again with salt.

If the rice is still too firm to the bite, add a little water and continue to simmer.

For the tomato salad, cut the tomatoes into large pieces, olives and capers into small cubes or slices, mix well.

Mix well vinegar, honey and olive oil, mix with the arugula and tomatoes, pluck the basil into coarse pieces and sprinkle on top.

Serve the fried fish skewers with risi-bisi and the colorful tomato salad.
