For the coconut sauce:








Instructions:

Soak sticky rice in cold water for about 12 hours. Then drain well.

Place in a large pot and fill with enough water to cover all the rice with 1 cm of water. Bring to a boil and cook at a low temperature until all the liquid is absorbed. Let cool.

Remove 2 tablespoons of coconut milk from the solid layer. Mix with cornstarch, salt and water in a small saucepan and bring to a boil.

Place remaining coconut milk in another saucepan and bring to a boil with water and sugar. Remove from heat and mix with rice.

Peel the pineapple, remove the stalk and cut the flesh into cubes.

Serve sticky rice with coconut sauce and pineapple pieces.

Preparation Tip:

Traditionally, sticky rice in Thailand is served with mango. However, it also tastes great with pineapple as in this recipe.
