Beat eggs, salt and water or milk well. In a frying pan, melt half of the butter. Pour the egg mixture into the frying pan and cook it a little bit, moving the pan gently and pushing the curdled egg into the pan with a spatula.

When only the surface is wet, fold the omelette in half or roll it up. (If the omelet is filled, spread the filling evenly before rolling it over). Add the rest of the butter and cook the omelet on the lower side until it is still slightly brown.

Turn out the finished omelet on the spot onto a hot plate, garnish with a little bit of parsley and serve quickly.

Herb omelette

Add 2 to 3 tablespoons of finely chopped parsley and chives to the egg mixture just before baking.

Omelette with tomatoes

Dip 2 to 4 tomatoes briefly in boiling water, remove the skin, cut in half, remove the seeds. Cut them into fine strips, steam them briefly in butter (perhaps with chopped parsley and onions), season lightly with salt and add to the egg mixture just before baking.
