Instructions:

Peel the onion and garlic and cut into small cubes. Peel or clean the carrots, zucchini and melanzani and cut into small pieces. Peel and dice the tomatoes. Wash the fish, pat dry, cut into pieces and season with mild curry. Heat the olive oil in a tajine or pan and fry the fish briefly on both sides. Then lift out and set aside. Saute the onion and garlic in the drippings until translucent. Stir in the tomato paste and add the vegetables. Season with green curry and salt and add a little water. Place the fish on top of the vegetables and cook, covered, for about 20 minutes. Sprinkle with parsley before serving. Serve with rice.
