Instructions:

For the duck in tamarind sauce, crush star anise, cinnamon, garlic and coriander in a mortar. Stir in light soy sauce and pepper and marinate the duck breast in it for at least 20 minutes.

Boil the tamarind juice with the soy sauce in a pan and dissolve the palm sugar in it and add duck jus. Mix tapioca flour well with cold water and thicken the tamarind sauce with it.

Sear the duck breast on both sides until medium rare. Let the breast rest for about 8 – 10 minutes and cut into slices. Sprinkle the duck in tamarind sauce with fresh coriander.
