A great cake recipe for any occasion:

Beat sugar and yolks until creamy. Add rum and whisk in butter that has softened at room temperature. Coarsely chop almond kernels and add together with potato flour. Fold in stiffly beaten egg whites with salt.

Cut dates in half lengthwise, remove seeds and mix with the sifted white flour.

Fill the cake form (quiche form) in layers with dough and dates, finish with dough at the end. Put everything together to cool for about 15 minutes.

Bake in a heated oven at 190 °C for about 45 min.

While still lukewarm, spread the cake with strained jam and evenly spread the almond flakes roasted in a dry frying pan on top.
