Instructions:

For the cucumber snake, wash vegetables and dry well. Using a zest cutter, peel the cucumber lengthwise all around to make longitudinal strips.

Then cut into slices about 1 cm wide. Leave the head and tail part a little wider. Cut the red peppers into squares about 2.5 x 2.5 cm.

Arrange a bed of lettuce on a plate and now alternate the cucumber slices and the bell pepper squares in a snake shape. Cut in the front for the head and tuck in a carrot strip in tongue shape.

Put on spices for the eyes (e.g. cloves, small black cumin seeds were used here). Cut the green bell pepper into strips and place between the snake’s loops.

Preparation Tip:

The cucumber snake can of course be layered with tomatoes or radishes instead of peppers, for example.
