Tip Indian dishes are often seasoned with fresh green chilies, but dried red chilies are just as common. In the hot south of the country, people eat an extraordinary amount of chili to keep the body sweating a lot and thus cool. In India, a myriad of chili varieties are grown, from very mild to very hot varieties.

In general, the smaller the chili, the hotter. Fresh chilies will keep in the refrigerator for up to 5 days. Fresh cilantro keeps exceptionally well if placed in a glass of water in a dark, cool place. It can be stored this way for up to 4 days.
