Instructions:

Grate marzipan with a fine grater and place in a bowl or on a work surface with the remaining ingredients. Mix by hand and quickly work into a shortcrust pastry. Form dough into rolls 2 to 3 cm thick, cover with plastic wrap and let rest in the refrigerator for at least 3 hours. Rolls in whisked yolk diluted with water, drain and roll carefully in sugar. Press sugar well while doing so. Cut off 3 mm thick slices. Place on a prepared baking tray and bake in a preheated oven at approx. 165 to 175 °C for 10 to 12 minutes until light in color under supervision.

Preparation Tip:

The crispy thalers not only taste good at Christmas, they are also suitable as an addition to delicious ice cream creations. Try replacing the lemon zest with orange zest or roll the cookies in ground almonds, peanuts, poppy seeds or coconut flakes instead of sugar. For a really Christmassy touch, roll the cookies in a sugar and cinnamon mixture.
