For the croquettes, first preheat the oven a little.

Wash and clean the potatoes, peel and quarter them. Cook potatoes in boiling, salted water until soft, strain and dry a bit more in the warm oven. Strain potatoes, season with salt, pepper, nutmeg powder and rosemary, let cool and knead into a firm dough with melted butter, yolks and flour.

Form thick sausages with floured hands, pull through beaten egg and coat with breadcrumbs.

Fry the croquettes in hot oil until golden brown and serve.
