For the croquette casserole, preheat the oven to 200°C top and bottom heat. Cut carrots into cubes, chop garlic and onion.

Sauté onion in olive oil until translucent. Sauté garlic briefly and add tomatoes in pieces, carrots, corn and Italian herbs and simmer for 5 minutes. Season to taste with salt and pepper.

Pour the tomato sauce into a shallow baking dish, sprinkle half of the grated cheese on top. Place croquettes decoratively on top and sprinkle the remaining cheese on top. Bake the croquette casserole for about 30 minutes, until the surface is browned.
