Instructions:

Season ‘Chüngeli’ pieces with salt and pepper, lightly flour, fry in hot oil, place on a sieve (steaming tray) form.

Dice the vegetables, sauté in butter, extinguish with red wine. Add gravy, spices, bacon rind and the sautéed ‘Chüngeli’ parts, cook on the stove with the lid closed until tender, season, dilute sauce with water or red wine if necessary.

Cooking time: back about 45 min, remaining pieces about 75 min.

Serve with polenta.
