Instructions:

For the buttermilk dressing, mix the buttermilk with oil and a little vinegar and season with salt, pepper and sugar. Slice the radishes and marinate them with a little olive oil and salt.

For the goat cheese balls, mix the pumpernickel in a food processor to make crumbs. Season the soft goat cheese with honey and form small balls. Roll in the pumpernickel crumbs.

Wash the chief lettuce and remove the outer leaves. Fan out on a plate and scatter the radishes on top. Sprinkle generously with the buttermilk dressing.
