Instructions:

For the chicken on thyme potatoes, cut the washed and unpeeled potatoes into thick slices.

Place the potato slices in a baking dish in the shape of a fennel. Sprinkle salt and thyme generously on top and drizzle with olive oil.

Then rub the chicken pieces with roast chicken seasoning and place on top of the potato slices.

Cover the roasting pan with a lid and put it in the oven at 180 °C for about 50 minutes.

Keep basting with a little water and remove the lid for the last 20 minutes.

Arrange the chicken on thyme potatoes and serve.

Chicken on thyme potatoes is especially delicious with a Mediterranean salad. If you like, you can also add fresh sprigs of rosemary instead of the thyme. Or you can do it with both spices.
