The Kirschmichel is also called Kirschenmichel (in Mannheim, for example) or Kerschenplotzer in the Palatinate. But it is known everywhere in Germany. Grease a fireproof dish with butter and sprinkle with breadcrumbs.

Cut white bread into slices about 1 cm thick. Cut in half. Spread one third of the bread on the baking pan. Cover with half of the washed, de-stemmed, drained and pitted cherries. Put another layer of white bread and cherries on top. Last layer of white bread. Mix sugar, eggs, salt and milk in a baking bowl. Add cherry brandy and lemon zest.

Pour over the casserole and leave for about 5 min.
