Put the pitted cherries in a large saucepan – holding at least 5 liters. Sprinkle sugar and mix gently with a wooden spoon, heat immediately.

Stir carefully, boil the cherries for 3 minutes, then add rum and lime juice and boil again.

Pour the finished compote into twist-off glasses.

Preparation Tip:

The cherry compote is a wonderful dessert with whipped cream, but is also wonderful as a garnish for Kaiserschmarren or as a filling for pies.
