Peel the pineapple and cut into 8 wedges, removing the hard inner part. Cut the vanilla bean in half lengthwise and scrape out the pulp with a knife. Mix the vanilla pulp (or vanilla sugar) with the granulated sugar. Heat the butter in a frying pan and brown the pineapple pieces in it. Sprinkle the pineapple pieces on both sides with the sugar so that they can caramelize on both sides. Finally, pour the coconut liqueur over the top. Remove the pineapple from the pan and spread it on plates. Pour the pineapple juice into the pan and let it boil down. Once the juice has a syrupy consistency, drizzle over the pineapple. Mix the whipped cream with the grated zest and juice of the lime. Stir in the powdered sugar and serve the lime cream with the caramelized pineapple pieces.
