For the caramelized pear tart, grate the zest from the lemon and squeeze the fruit.

Preheat the oven to 200 °C and line a tart pan with the butter in pieces. Sprinkle almond flakes, powdered sugar and vanilla sugar over the top.

Peel the pears, cut them in half and remove the core.

Immediately sprinkle with the lemon juice so that they do not turn brown.

Place the pear pieces in the tart pan and cover with the puff pastry. Sprinkle a little of the lemon zest on top.

Close the edge well and carefully prick the pastry several times with a fork.

Bake on the middle rack for about half an hour and let rest in the turned-off oven for another quarter of an hour.

Turn out the caramelized pear tart and serve it preferably lukewarm.

The caramelized pear tart goes well with semi-stiff whipped cream, refined with vanilla sugar!
