For the caramel ice cream, finely dice caramels with a knife. Set one third aside. Place remaining candy cubes in a saucepan with the coffee cream and melt over medium heat while stirring.

Prepare ice cream mixture from milk, whipped cream, egg yolks and powdered sugar according to the basic recipe, then stir in the caramel whipped cream. Chill the ice cream mixture in the refrigerator for 30 minutes.

Pour the well chilled ice cream mixture into the ice cream maker and freeze until creamy and firm. With the motor running, add the caramel cubes and stir briefly. Serve the caramel ice cream immediately.
