Lightly pound the veal. Finely dice onion and juniper ham and sauté in half oil, half butter in frying pan. Put cream cheese and chopped mozarella in a large enough bowl, mix with onion-ham mixture, season with pesto, cayenne pepper and salt. Spread the amount on the meat. Gently wrap sides, roll meat and hold together with a wooden stick.

Brown on all sides in frying pan with vegetable oil, then place on rack in oven preheated to 200 °C for five minutes. Before serving, toss in butter. Remove the wooden stick and bring to the table with braised vegetables.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
