Total time: 30 min

Ingredients:

Instructions:

For the broccoli noodles with pork tenderloin, first clean the broccoli, wash and divide into florets. Clean the spring onions, wash and cut into fine rings. Peel the shallots and garlic and cut them into thin slices. Peel the ginger and dice very finely. Cut the pork tenderloin into thin slices.

Heat the oil in a frying pan with high sides or in a wide pot. Sear the meat in it over high heat for about ½ minute on each side, salt lightly and remove.

Remove the pan from the heat. Add in the noodles, broccoli, scallions, garlic, shallots and the ginger. Add the rice wine, soy sauce, sesame oil, 550 ml cold water and ½ tsp salt. Cover and bring everything to a boil over high heat.

Cook the noodles uncovered over medium-high heat for about 12 minutes. Keep stirring, the more liquid boiled away, the more often. Taste the pasta. If they are not cooked through, add another 3-5 tablespoons of water if needed and continue to simmer briefly. Fold in the pork tenderloin and heat again briefly. Finally, sprinkle the broccoli noodles with pork tenderloin with the toasted sesame seeds and serve.

Preparation Tip:

A nutty topping provides extra bite. In addition to sesame seeds, peanuts and cashews go particularly well with Asian dishes such as broccoli noodles with pork tenderloin. If you have time, roast them lightly for an even more intense flavor. I also like to use wasabi peanuts from the snack shelf. But be careful, they are pretty spicy!
