For the broccoli cream soup, briefly fry the chopped onion in butter. Then add diced garlic, leek, carrots and broccoli and sauté the vegetables some more.

Pour in beef broth so that the vegetables are not completely covered. After cooking for about 1/2 hour, puree the vegetables with a blender, add pepper, nutmeg, crème fraîche and whipped cream and bring to the boil again briefly.

Stir the soup with the blender until small bubbles appear. Serve the broccoli cream soup with balsamic sauce s and toasted bread cubes.

Preparation Tip:

Instead of whipped cream, you can also use milk for the broccoli foam soup. If you don't have beef broth, just add bouillon cubes to the water.
