For the brioche, mix all ingredients into a smooth dough. Cover and leave to rise in the Miele steam oven at 40°C for 20 minutes. Then knead the dough on a floured work surface and shape into a roll. Cut into pieces of equal size. Grind the dough pieces by hand on the work surface until balls are formed. Let rest briefly and brush with egg.

Bake the brioche at these settings in the Combigarer.
