Instructions:

For the Beef Tatar, finely dice the well chilled beef lung roast, then finely chop with a large knife.

Finely chop shallots, pickled gherkins, capers and anchovy fillets. Mix into the meat and season with ketchup, mustard, paprika powder and parsley. Season with a squeeze of lemon juice, salt and pepper and finally stir in the egg yolks.

Shape the beef tartare into loaves and arrange on the plates. Garnish with oak leaf lettuce and quartered cherry tomatoes.

Preparation Tip:

Serve fresh white bread and butter with the beef tartare.
