For the beef roulades, first prepare the stuffing. For the filling, dice bacon, onion and gherkins. Chop capers.

Wash, clean and grate carrots. Mix bacon, onion, gherkins, capers, parsley and carrots with anchovy paste and mustard to a homogeneous mass.

Wash the meat, dry it, pound it and cut it at the edges. Then salt, pepper, coat with stuffing, roll up and pin with toothpicks.

Heat the butter and brown the roulades in it. Prepare beef broth, bring to a boil and pour over roulades. Steam for 40 minutes until tender.

Take out roulades, remove toothpicks and strain juices. Mix flour and sour cream, thicken juice, boil well and season beef roulades again.
