For the banana chocolate tartlets, first prepare the mousse. To do this, break the chocolate into pieces and melt over a water bath. Mix the syrup and cream cheese well.

Stir in the melted chocolate and continue to mix. Finely crumble the amarettini.

Add just enough melted butter to moisten the crumbs well so they hold together better.

Place one 8 cm diameter metal ring on each plate, pour crumb mixture into metal rings and press level.

Layer in a layer of thicker banana pieces, standing the outer slices on edge all around. Finally, pour the mousse into the rings and smooth the surface.

Dust with cocoa and peel off the rings. Place a violet candied with cane sugar on top of the banana-chocolate cupcakes for decoration and serve.
