Remove the stones from the apricots and set aside 2 beautiful halves for each unit. Puree the rest and mix the puree with the curd cheese, the whipped cream and 4/5 of the sugar.

This mixture is processed in the ice cream maker as usual.

In the meantime, cook the apricot halves with the rest of the sugar and water on a low heat for about 10 minutes. Remove the fruit, let the juice simmer for a few minutes and then add the liqueur.

Serve the apricot halves with ice cream.
