Instructions:

Blanch (scald) apricots, remove seeds, skin. Heat water and sugar until melted, add the juice of one lemon and stir until cold. Finely blend apricots and water in a hand mixer. Add white wine and fold in beaten egg white.

Stir in the ice cream maker until the sorbet is creamy and firm.
