For the apricot dumplings, mix well the curd (tofu) with the egg (egg substitute), the flour and the pinch of salt.

With floured hands divide the dough into 6 balls. Press one ball at a time to form a disk, place the apricot inside and pull the dough over it, closing it well with rolling motions.

Bring the water to a boil and simmer the dumplings in it for 20 minutes. Fry the oil and breadcrumbs in a pan.

Roll the cooked apricot dumplings in the breadcrumbs and serve sprinkled with powdered sugar.
