Try this delicious cake recipe:

(*) Cake springform pan 22 cm ø or baking tray with high sides.

Preheat the oven to 180 °C.

Cover the bottom of the pan with parchment paper. Butter the paper and the sides of the pan. Sprinkle the cane sugar on the bottom.

Peel, quarter, core and cut the apples into thin slices. Spread them out on the cane sugar.

Beat the butter with the granulated sugar and vanilla sugar until fluffy. Next, fold in one egg yolk at a time. Combine almond kernels, flour and baking powder and stir in. Finally, stir in the crème fraîche.

Whip the egg whites until stiff. Carefully fold into the cake mixture. Spoon the mixture over the apples.

Bake the cake in the oven at 180 °C on the second rack from the bottom for about fifty minutes. Make the pin test.

Remove the cake, let it stand in the pan for two or three minutes, then turn it out on the spot onto a cake plate and peel off the parchment paper precisely.

Lukewarm, this cake tastes quite exceptional. A suitable accompaniment is whipped cream perfumed with a tiny bit of vanilla sugar.
