A great cake recipe for any occasion:

Stir yolks until creamy. Sugar together with Appenzeller Alpenbitter boil and hot to the yolk form, cooled stir.

In the meantime, soak the gelatine, let it melt and add to the above mixture.

Roast the coarsely chopped walnuts, add to the parfait mixture together with the diced apricots and the gingerbread spice.

Whip the cream until stiff and fold into the above mixture, fill into parfait bars and freeze.

Serving tip: serve with red wine sabayon and cognac plums.
