Instructions:

Try this delicious cake recipe:

1. rinse lemon well with hot water and spiral peel, then squeeze. Peel apples, quarter, core and cut into wedges. Sprinkle with 1 tbsp. juice of one lemon.

2. bring apple juice to a boil with half of the lemon peel (use other half elsewhere) and 30 g sugar. Stir cornstarch with 2 tbsp. water, fold in and bring to a boil once. Add apple slices to juice form and steep at low temperature for 10 min. Put in a cool place.

3. stir flour with milk, 3 tbsp. lukewarm water, egg yolk and salt.

Beat the egg whites with the remaining sugar until stiff and fold into the dough. Heat the clarified butter in batches in a frying pan, add a few flaked almonds to each and pour the batter on top. Roast 4 to 6 pancakes, one after the other, at low temperature.

Whip the cream until semi-stiff. Serve pancakes with whipped cream and apple compote. Dust with powdered sugar.
