Instructions:

For the Actimel cake, which is not baked, the cookies must first be finely crumbled. (Tip: put the cookies in a freezer bag and crush them with a mallet).

Now mix the crumbled cookies with 100 g melted butter. Pour the mixture into a Kaiser springform pan (24 cm) and press down well with your hands. Place in the refrigerator for approx. 2 hours and allow the cake base to cool.

In the meantime, whip the cream until stiff. Mix the curd with the Actimel until smooth and stir in 100 g sugar. Scrape out a fresh vanilla pod and add it. Pour the mixture onto the cookie base and chill well in the refrigerator for at least 12 hrs.

Shortly before serving, garnish the Actimel cake with fresh cherries and sprinkle with a little powdered sugar.More recipes from CookingCatrin can be found in this blog

Preparation Tip:

Feel free to leave the stems on the cherries - saves work & looks very nice. Enjoy the Actimel cake on a hot summer day.
