Sift flour, put in a suitable bowl with oat flour, salt and baking soda and mix, chop butter into small cubes and grate into the mixture with both hands – small crumbles should be formed.

Stir in sugar and mix well. Pour milk over it and knead the whole thing into a firm dough. Flour the baking board and roll out the dough to a thickness of about 1 cm. Use a fork to perforate the surface of the dough tightly, similar to Leibniz butter cookies, and cut out round cookies with a water glass.

Place cookies on a greased baking sheet and bake in oven heated to 180 °C for 15-20 min.

Lift the cookies from the baking tray with a palette and cool on a cooling rack, then store in airtight tins.
