Preheat the oven to 150 °C. Season the well boned salmon trout fillets with salt and pepper. Heat olive oil in a pan and quickly sear the fillets on the skin side. Place in the preheated oven and roast at 150 °C for approx. 5 minutes. In the meantime, sauté the diced vegetables in a little olive oil. Season with salt and pepper, add some water and simmer for 1 minute. Sprinkle in chopped lovage and round off with a tablespoon of butter. Arrange the vegetables on warmed plates and place the fish fillets on top.
