For the oatmeal cookies, first dry roast oatmeal with grated almonds and coconut.
Mix the yolks with the powdered sugar. Beat egg whites with fine crystal sugar and a pinch of salt until stiff. Fold the oat flake mixture with the yolk mixture alternately into the beaten egg whites and add some cinnamon.
Using a spoon, place small oatmeal cookies on the baking sheet and bake at 180 °C for about 10 minutes.
