1. bring to a boil the white wine with 2 liters of cloves, water, peppercorns and bay leaf. Turn down the temperature, pour in the ham and simmer on low for 1 1/2 hours with the lid closed. Stir together the mustard and honey to make a smooth paste.
2. remove the ham from the broth, chop the pork rind exactly. Coat the roast with the paste and place on a baking sheet. Bake in the heated oven at 200 °C on the 2nd rack from the bottom.
Bake on the second rack from the bottom for 30-35 minutes, keep warm.
Clean the spring onions and cut them into 4 cm long pieces. Halve or quarter figs. Melt butter in a frying pan. Sauté spring onions and figs in it for 3 minutes. Add sugar, orange juice and vinegar and bring to a boil once. Season with salt and cayenne pepper. Cut ham into slices and arrange on a platter with the vegetables.
