In a mortar, mix the cumin, salt, pepper and coriander properly, after a while add the peeled and chopped garlic cloves. When a homogeneous paste is obtained after a long pounding, add the paprika powder and mix well. Finally, stir the oil into the already creamy paste little by little, pouring it into the mortar in a fine stream while stirring vigorously. The result is virtually a mayo, a small stream of vinegar is added and the whole clarified with tap water.
Parmesan or firm goat cheese. The coriander herb should not be omitted.
Tip: The better the parmesan, the finer the flavor!
