For the wild garlic paste, remove the stems from the wild garlic. Wash the wild garlic very well, drain well on paper towels and first cut thinly with a sharp knife and then chop. Mix with salt and oil so well that the salt dissolves.
Pour the wild garlic paste into small jars and store in a cool as well as dark place (it is best to wrap it in paper to ensure light protection). Keeps for about 4 weeks.
