For baked bananas, mix flour with eggs and blend with milk, rum, sugar and vanilla sugar to make a thick pancake batter.
Let the dough rest. Heat oil or coconut fat. Peel bananas and cut into strips about 4 cm wide. Dip the bananas in batter and fry until floating.
Drain on kitchen roll. Sprinkle baked bananas with powdered sugar and serve immediately.
