For the turkey roulades, pound the turkey cutlets very thin and salt and pepper both sides. Then place the ham and cheese on the cutlet and roll together, fix with a toothpick.
Heat some oil in a pan and sear the turkey roulades briefly on all sides, then place in a damper dish with a hole and cook (100 degrees/ 10 minutes).

The turkey roulades are also very good stuffed with bacon or other ham. With bacon they get a fine spicy note.
