Soak spelt in water for one night. A day later, prepare 30 min. in the soaking water, then swell. Divide cauliflower and broccoli into small roses and prepare al dente in a little salted water. Drain. Cut the cheese into cubes. Mix eggs with crème fraîche, milk and spices. Drain the spelt grains, if necessary. Place in a greased ovenproof dish, spread the vegetables evenly over the top and season with pepper. Sprinkle with the cheese cubes and pour the egg-milk. Place the dish on the support rack in the oven and bake until done.
