Make a firm dough with egg, salt, flour and water. Scrape the dough over a grater and dry the resulting riebele on a dish or paper for 20 minutes. Dip them into the simmering beef broth. Season with salt, pepper and freshly grated muscatel and sprinkle with parsley.
