For the herb gnocchi, prepare a potato dough from the ingredients: Peel, wash and boil the potato until soft.
Put flour on a clean work surface, add potatoes while they are still hot, form a pit, add butter, spices, herbs and the egg and knead quickly.
Form the dough into a roll, cut off pieces to form balls and flatten with a fork. Meanwhile, bring salted water to a boil and cook the gnocchi until they float to the top.
Then strain, rinse with cold water and toss in a pan with butter before serving.
