For the pear-ginger compote with cinnamon, first wash the pears, peel and cut into wedges. Peel and dice the ginger.
Bring pear wedges and ginger cubes to a boil with sugar, water, apple juice and the cinnamon stick in a large pot. Gently simmer the mixture for 5-10 minutes, stirring occasionally with a wooden spoon.
Remove the cinnamon stick, arrange the compote in small bowls or on dessert plates, garnish with an additional pinch of ground cinnamon to taste and serve the pear-ginger compote with cinnamon.

Pear-ginger compote with cinnamon can also be prepared in advance: To do this, immediately pour the hot compote into jars with screw tops after cooking, insert 1/2 cinnamon stick into each, screw the lid on tightly, turn the jars upside down and let stand upside down for at least 5 minutes.
