For the cream of broccoli soup, wash the broccoli and cut into florets.
Place the vegetables in a pot and simmer, covered with water, for about 10 minutes. Quench with cold water.
Peel and chop the onion.
In a large pot, sauté the onion in the butter and then dust with the flour. While stirring, pour in the vegetable cooking water (whisk).
Add the broccoli and bring to a boil once. Blend with a hand blender, stir in the crème fraîche and season with salt and pepper.
Divide the cream of broccoli soup into soup bowls and serve immediately sprinkled with chopped parsley.
